I get the daily Hungry Girl email and most I skim and delete, but there are occasionally ones that I want to save. This was one of them and while the recipes are certainly easy and of the kind that make you slap your head and think, "Why didn't I ever think of that," they are worth saving for those times we find ourselves in a breakfast slump. I am a fan of eggbeaters just because it means that I can eat "two eggs" for less WW point values than regular eggs. I also like the light Laughing Cow cheese and never thought to throw those in my eggs! These are super easy breakfasts that I can throw together quickly and eat before work.
